Bathua Paratha. Parathas stuffed with bathua, a seasonal winter leafy green. Bathua is called Chenopodium album or lamb’s quarters in English.
Creamy Egg Curry. A delicious family recipe to make a creamy egg curry that is so good with hot ghee rice and appams.
Dal Palak. A quintessential winter lentil and spinach dish from North India that is so nutritious, wholesome and very delicious as well.
Tawa Paneer. A delicious paneer or Indian style cottage cheese dish that is cooked in onions and a smooth makhani sauce. So good with parathas.
Minestrone soup is a classic Italian soup that uses seasonal vegetables, beans, pasta, and lots of tomatoes. I love my homemade fall version and occasionally add tortellini pasta as well.
