Sago/Sabudana/ Tapioca Pearls are a fantastic alternative to gluten and rice.
They are a primary (and rich) source of carbohydrates in some parts of the world, for example for the lowland peoples of New Guinea and the Moluccas.
Sago is a super (miracle) food I’d say and works so well in both sweet and savoury dishes. Sago contains antioxidants and resistant starch and has been linked to many health benefits.
In India, both these ingredients ie sabudana and sweet potatoes are particularly popular during the fasting days. The norm may be to combine sago/sabudana with potatoes but trust me, sweet potatoes are so good here as well.
I have combined these two to make Tikkis that are delicious, not deep-fried and very filling on their own. The crunch of the roasted peanuts here is amazing and elevates the dish completely.
They are so good on days you may be fasting like on Navratri for example, or simply on days, you want a change in the regular breakfast scene. They are very nourishing and a complete meal on their own.
The only tricky part here is to have well-soaked sabudana pearls. I would usually take a cup of sabudana and wash them well. Thereafter, soak them in a bowl with 2 cups water overnight or for a minimum of 5-6 hours. They should not be drowned in the water at all. Fluff them lightly to ensure all grains are well soaked and soft uniformly. Just in case they are not, feel free to splash a few drops of water and mix them well. Leave for about an hour and they’ll be soft very soon.

Sabudana and Sweet Potato Tikkis
Ingredients
- 2 boiled and mashed sweet potatoes
- 1 small boiled and mashed potato
- 1 cup soaked sago/ sabudana
- 1/4 cup coarse ground roasted peanuts
- 1 tsp grated fresh ginger
- 2-3 chopped green chillies
- 2 tbsp chopped coriander leaves
- 1/4 coarse ground black pepper
- salt to taste
- Oil for pan-frying
Instructions
- Mix all of the above with gentle hands.
- Shape into patties/ tikkis applying some oil on the palms of your hands.
- Heat a cast iron skillet/pan, add 2 tbsp oil and spread well.
- Shallow/ pan fry the tikkis until golden brown on both sides.
- Serve hot with a cilantro/ mint chutney. Some buttermilk on the side is very good too.
